My weight loss journey

After three pregnancies, too many calories and not enough exercise, I was overweight and very unhappy with my body. So I made the decision to change my lifestyle and commit to health and fitness. I started cutting my calories, eating a healthy, balanced diet and progressed my exercise program. I went from a size 16 to a size 2 and dropped my weight from 200lbs to 130lbs. I am now in better shape than I have ever been in my life and at age 34 my body has never been this fit.

Rice And Beans With a Kick

RICE AND BEANS WITH A KICK

Ingredients:
2 cups brown rice
1 can ranch style black beans
1 can Mexican style diced tomatoes
1 pablano pepper diced
1/2 red onion diced
3 cloves garlic diced
1 tbs olive oil

This is very easy and you can make this with any veges you like. First saute the pepper, onion and garlic in the olive oil on medium heat. Then add all other ingredients and 1 cup of water. Cover and let simmer for about 20 minutes, stir frequently. You might need to add some more water if it starts to stick.
You can serve this with you fav side vege and whole wheat tortillas, top it with a few slices of avocado and you are good to go!

Brown rice and black beans are super healthy, full of fiber and protein which makes you feel fuller longer.

Healthy Enchiladas Verde

HEALTHY ENCHILADAS VERDE

This dish is great for feeding a large family like mine. Always a crowd pleaser!

Ingredients:
Whole wheat tortillas
Spanish rice-frozen
your fav kind of beans canned
1 can of verde sauce
frozen corn
diced cilantro

It very easy, you can get creative and add any veges you like to this. Just fill the tortillas with all the ingredients and roll them up in a casserole dish. Then evenly pour the verde sauce on the top, sprinkle with cilantro and bake at 350 for about 30 min.
